Last night I tried the Fody Food Co. shallot oil and it exceeded my expectations. When I opened the bottle, it smelled strongly of an onion flavor (more than I expected)! I cut up two Russet potatoes into chunks and decided to roast them with some sea salt and the shallot oil. This was to accompany a baked salmon main dish. I must say it was a great side to my salmon. I shared it with my boyfriend who was also pleasantly surprised that the shallot taste was strong without using too much oil. I think roasting it brought out the flavor even more but I can’t be sure (just a hunch). 10 out of 10 and glad to have this is my pantry for more dishes. I could see this great on a tomato salad so that may be next.
