Move over frozen fish sticks! You can get these homemade fish sticks on the table in half an hour – and they are sporting a coat of super-crunchy Fody Pink Himalayan Salt Potato Chips. That’s right, instead of fish and chips, we used the chips as a crispy coating. We made these in our fave new appliance, the air fryer! We know you have wanted Low FODMAP air fryer recipes and these fun, kid-friendly fish sticks are a perfect way to take advantage of your machine. This air fryer fish recipe was developed for a 4-quart volume air fryer.
Preheat air fryer to 400°F (200°C).
Place potato starch in a wide mixing bowl, whisk eggs in another bowl, and place crushed Low FODMAP potato chips in a third bowl. Place a rack over a rimmed sheet pan and have that handy.
Dip your fish pieces, one at a time, in the potato starch, turning to coat evenly. Shake excess back into bowl. Dip in well-beaten eggs to coat on all sides, then dip in finely crushed potato chips, again coating evenly. Use a dry hand to help press the chips to adhere. Set dipped fish sticks aside on prepared rack and repeat with remaining pieces of fish.
Place the coated fish in the fryer basket, evenly spaced out. Air fry, undisturbed, for about 10 minutes or until golden brown. Cook in batches if necessary. Serve with the Fody Maple Dijon Salad Dressing for dipping. Serve Low FODMAP air fryer fish sticks with a side of our creamy coleslaw!
