Fody’s BBQ Chicken Tortilla Pizzas
These BBQ Chicken Tortilla Pizzas are super savory and loaded with bold flavors, thanks to a quick homemade bbq sauce, mozzarella, and herbs. They’re easy enough for a quick weeknight meal, yet they feel special and fun at the same time!
Ingredients for Fody’s BBQ Chicken Tortilla Pizzas
- 3 tbsp Fody’s Shallot Infused Olive Oil, divided
- 1 bell pepper, sliced
- 2 cups cooked shredded or cubed chicken
- 2 tsp steak seasoning
- ½ tsp smoked paprika
- ½ tsp dried oregano
- 2 cups mozzarella cheese shreds
- ¼ cup finely chopped fresh basil
- 4 gluten-free tortillas
- ½ avocado, sliced
BBQ Sauce
- 1 cup Fody’s Original Ketchup
- 2 tbsp smoked paprika
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
Directions for Fody’s BBQ Chicken Tortilla Pizzas
- Preheat oven to 425 degrees F. In a large pan on medium heat, add 1 tbsp shallot oil and bell pepper. Cook 5-7 min, stirring occasionally, lowering the heat to medium-low as need to prevent burning. Some browning is good and adds flavor. Transfer peppers to a plate.
- Add remaining shallot oil to skillet, along with chicken, steak seasoning, smoked paprika, and oregano. Toss well to incorporate. Transfer chicken to a plate.
- To assemble tortilla pizzas, top tortillas with a thin layer of bbq sauce, spreading over the tortilla with a spoon. Layer on half the cheese shreds, then layer the chicken and peppers, then layer the remaining cheese shreds. Bake in oven for 3-5 min. Remove from oven and top with fresh basil and avocado. Drizzle remaining bbq sauce over top as desired.
