Fody’s Low FODMAP BBQ Chicken Salad
When that craving hits for a super delicious and flavorful salad, this BBQ Chicken Salad with Maple Dijon Dressing ticks all the boxes. With hearty cheddar cheese and vibrant corn and tomatoes, this salad is sure to be a favorite.
Ingredients for Fody’s Low FODMAP BBQ Chicken Salad
- 2 tbsp Fody’s Garlic Infused Olive Oil
- 1 lb. boneless skinless chicken thighs
- ½ tsp kosher salt
- 1/3 cup Fody’s Original BBQ
- 2 heads romaine lettuce, chopped
- 1 cup Fody’s Maple Dijon Dressing, or to taste
- 1 roma tomatoes, diced
- ¾ cup cooked corn
- ¼ cup chopped cilantro
- ⅔ cup shredded cheddar cheese
- 1 cup gluten-free croutons
Directions for Fody’s Low FODMAP BBQ Chicken Salad
In a large skillet over medium heat, add garlic oil. Once hot, add chicken pieces and salt, and toss. Arrange chicken in single layer. Cook 7-10 min, flipping halfway, until chicken is just cooked through. Add BBQ sauce, and stir. Transfer to a plate.
Add romaine to a large mixing bowl and toss with maple dijon dressing. Top with chicken, tomatoes, corn cilantro, cheese and croutons.
