We love sheet pan salmon recipes! Everything gets cooked in the oven and in one pan – it's one of the best ways to cook salmon! In this case we have heart-healthy salmon, hearty no-FODMAP white potatoes, sweet potatoes, and fresh green beans seasoned with Fody's Low FODMAP Taco Seasoning, Garlic-Infused Low FODMAP Olive Oil and Low FODMAP BBQ Sauce. Did you know that Fody has several BBQ sauces? You can use any of them – Original, Maple, or Chipotle.
BTW sweet potatoes contain mannitol, and green beans contain sorbitol, both of which are polyols. They are different FODMAPs, but related, so if you have a polyol sensitivity, you might consider just using white potatoes.
Note that the ingredients are added to the pan in staggered timing. Getting the potatoes on the pan and in the oven first allows them to get the roasting time they need to cook through in time for your Low FODMAP dinner.
Fody's Sheet Pan Salmon & Sweet Potato Low FODMAP Dinner Ingredients:
- 1 medium sweet potato (about 4-ounces/115 g), peeled and cut into thin wedges
- 1 medium russet baking potato, peeled and cut into thin wedges
- 3 tablespoons Fody Garlic-Infused Olive Oil, divided
- ¾ teaspoon Fody Taco Seasoning, divided
- 1-pound (455 g) fresh salmon filet, cut crosswise into 4 even pieces
- 1/4 cup (60 ml) Fody BBQ sauce, your choice of Original, Maple or Chipotle BBQ Sauce
- 4-ounces (115 g) slender green beans, trimmed
Directions for Fody's Sheet Pan Salmon & Sweet Potato Low FODMAP Dinner
Preheat oven to 425°F (220°C). Line a half-sheet rimmed baking pan with parchment paper or aluminum foil; set aside.
In a medium-sized mixing bowl toss the sweet potatoes, potatoes, 2 tablespoons of the Low FODMAP oil and ½ teaspoon of the Taco Seasoning to coat (save the bowl; no need to clean). Scatter potatoes evenly on baking sheet pan. Roast for 20 minutes. Meanwhile coat the flesh-side of the salmon with BBQ sauce and toss the green beans in the bowl you used before with remaining 1 tablespoon oil and ¼ teaspoon Fody Taco Seasoning.
Make a spot for the salmon on the pan by pushing the potatoes together and also make a space for the beans. Place salmon skin down and the beans on the sheet pan. Turn oven down to 350°F (180°C) and return pan to oven. Cook until salmon is flaky and flesh is opaque, about 15 minutes more. Enjoy your Low FODMAP dinner immediately!
