Fody's Bacon Sheet Pan Breakfast Bake

When you’re ready to serve, heat the breakfast bake in the oven for 15 minutes, fry up a few eggs, and enjoy your quick and easy Low FODMAP meal!
Fody's Low FODMAP Bacon Sheet Pan Breakfast Bake Ingredients:
- 8 strips nitrate-free bacon
- 8 large eggs
- 30 oz shredded unseasoned potatoes (frozen + thawed)
- 1 cup shredded cheddar cheese
- ¼ cup Fody's BBQ Sauce
- 2 tbsp Fody's Garlic-Infused Olive Oil
- 2 tsp dried oregano
- 2 tsp paprika
- 1 tsp sea salt
- 1 tsp black pepper
- Scallion greens (for garnish)
Directions for Fody's Low FODMAP Bacon Sheet Pan Breakfast Bake
Preheat oven to 425F and grease a baking sheet well.
Using a knife or kitchen shears, cut bacon into ½ inch pieces.
In a medium mixing bowl, toss bacon pieces in Fody BBQ sauce, coating evenly.
In a large mixing bowl, toss together spices, garlic oil, and shredded potatoes. Spread evenly across baking sheet, top with bacon and bake for 25-30 minutes until potatoes begin to brown.
Using the back of a measuring cup or spoon, make 8 divots in the potatoes + crack each individual egg into the divot. Sprinkle with cheese and bake an additional 10-12 minutes until egg whites are fully cooked but yolks are thickened but still runny.
Garnish with scallion greens and serve your Low FODMAP breakfast bake immediately!
