Low FODMAP Oatmeal Cookie Energy Balls
Description of Fody's Low FODMAP Oatmeal Cookie Energy Balls
These little one-bite mouthfuls of goodness are packed with protein, fiber and will sustain you during busy days at school, the office or when you are out for an energetic athletic activity. We call them Low FODMAP Oatmeal Cookie Energy Balls because they taste like an oatmeal cookie! They combine oats, peanut butter, maple syrup, raisins and cinnamon for an old-fashioned flavor in a newfangled form.
They can be made by hand in a bowl with a sturdy wooden spoon, in which case their look will be a bit more rustic, or they can be made with a stand mixer and flat paddle, which eliminates the need for elbow grease. Any which way, this is one of those super-easy dump-and-mix recipes that will keep you on the right track for Low FODMAP success. Never be without proper snacks! Our low FODMAP snack bars can help in this endeavor, too.
Low FODMAP Oatmeal Cookie Energy Balls Ingredients
- 1 cup (99 g) old-fashioned oats; use gluten-free if following a gluten-free diet
- 1/3 cup (96 g) creamy-style peanut butter
- 1/4 cup (41 g) dark raisins, roughly chopped
- 2 tablespoons maple syrup
- 2 tablespoons ground flax seeds
- 1 tablespoon hemp seeds
-
1/4 teaspoon cinnamon
Cooking Directions for Low FODMAP Oatmeal Cookie Energy Balls
Place all the ingredients in a bowl and mix together well with a sturdy wooden spoon. If you have a stand mixer you can combine the ingredients using the flat paddle attachment on medium speed. You will know when you are done mixing when the mixture holds together when squeezed.
Roll the mixture into small 1-inch (2.5 cm) balls, compressing well using your fingers and rolling into nice round shapes between your palms. Store in an airtight container for up to 1 week or freeze in an airtight container for up to a month.
