Tofu Veggie Kabobs are a fun way to celebrate the season, with lots of nourishing ingredients and pops of sweetness and flavor, thanks to pineapple and zesty steak seasoning. This colorful recipe will brighten any meal!
Sweet & Sour Sauce:
Add all Sweet & Sour Sauce ingredients to a small saucepan and stir well. Bring to a simmer over medium heat, stirring occasionally, until sauce thickens. In a large mixing bowl, add tofu, bell pepper, zucchini, pineapple, 3 tbsp of the garlic oil, steak seasoning, and Italian seasoning. Gently toss to combine. Place onto skewers.
Heat a grill pan on medium heat, and spray with cooking spray or more garlic oil. Place skewers onto grill pan and cook 5-7 minutes, brushing generously with sauce, then flip and cook another 5-7min.
Meanwhile, heat skillet over medium heat and add remaining ½ tbsp garlic oil, corn, chipotle powder, and dash of salt. Stir and cook 2-3 min. Serve skewers topped with chipotle corn and cilantro, with remaining sauce on the side, along with lime wedges.
