Fody's Easy Tomato Soup + Grilled Cheese
You don’t have to miss out on your favorite cozy winter meals any longer! Thanks to Fody’s Garlic Oil and Tomato Basil Sauce, you can enjoy a quick and easy homemade tomato soup + delicious garlicy grilled cheese the next time you’re curled up on a snowy day (or the next time the craving strikes!) Robust in flavor and oh so comforting, you’ll please everyone with this family favorite.
Fody's Easy Tomato Soup + Grilled Cheese Ingredients:
- 2 cups Fody’s Tomato Basil Sauce
- 1 cup chicken or vegetable broth
- ½ cup lactose free milk or almond milk
- 2 tbsp Fody’s Garlic-Infused Olive Oil
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp salt
- Fresh parsley or basil for garnish
- 6 slices sourdough bread
- 6 slices cheese, like havarti or cheddar
- 3 tbsp butter
- Fody’s Garlic-Infused Olive Oil for pan
Directions for Fody's Easy Tomato Soup + Grilled Cheese
In a medium sized pot over medium heat, add tomato sauce, broth, garlic oil and spices, stirring to combine.
Heat, but do not boil, until soup is heated all the way through, continuing to stir in order to ensure all ingredients are fully incorporated.
When soup is almost finished cooking, add garlic oil to a small skillet + heat over medium low heat until shimmering.
Butter both sides of each slice of sourdough and assemble sandwich. Place one side down in pan once oil is hot, place a lid on the pan + allow to cook until golden brown, about 2-3 minutes.
Flip sandwich and replace lid, cooking an additional 2-3 minutes until cheese is melted and bread is golden.
Once your easy tomato soup is fully heated through, remove from heat + stir in ½ cup of milk or almond milk.
Garnish with fresh parsley or basil and serve.
