Fody's Spicy Shrimp Pasta with Spinach
Succulent shrimp, fresh spinach and gluten free pasta all tossed in a rich & spicy marinara sauce! This pasta dish is so simple to make and full of Italian flair! It comes together in less than 30 minutes making it an easy meal for a weeknight!
Fody's Spicy Shrimp Pasta with Spinach Ingredients:
- gluten free penne pasta (made with low FODMAP ingredients)
- 2¼ cups Fody's Spicy Marinara Sauce
- 2 Tbsp Fody's Garlic Infused Olive Oil
- 1 lb. raw shrimp, peeled & deveined (tails taken off)
- 3 cups spinach
- Salt & black pepper, to taste
- ¼ cup parmesan, for garnish
- Sliced fresh basil, for garnish
Directions for Fody's Spicy Shrimp Pasta with Spinach
Boil the pasta according to the package’s directions, then drain it and set it aside.
Next heat 1 Tbsp of olive oil in a large pan over medium high heat. While the pan is heating, season both sides of your shrimp with salt and pepper. Once the pan is hot, place your shrimp in the pan and cook for 2-3 minutes per side or until the shrimp is cooked all the way through. Transfer them to a bowl once done.
Then heat your remaining 1 Tbsp olive oil in the same pan and add your spinach. Saute it until it’s slightly wilted. Then turn your burner down to low and add your pasta, shrimp and spicy marinara to pan and heat it until warm.
Serve immediately with parmesan cheese and fresh basil sprinkled over the top of each bowl.
