Fody's Sweet & Sour Chicken Meatballs

Description of Fody's Sweet & Sour Chicken Meatballs

These easy chicken meatballs and sweet pineapple chunks are tossed in the best homemade sweet & sour sauce! These healthy meatballs are a great option for a holiday appetizer or can even be served as a quick entrée with rice!

Fody's Sweet & Sour Chicken Meatballs Ingredients:

  • 1 lb ground chicken
  • 2 Tbsp original gluten free panko breadcrumbs
  • 1 Tbsp pineapple juice, from the can
  • 1 Tbsp soy sauce
  • 1 egg
  • ¼ cup green scallions, finely chopped (only the green parts)
  • ⅛ tsp black pepper
  • 1 Tbsp Fody's Garlic Infused Olive Oil
  • 1 20oz. can pineapple chunks, drained (reserving 1 Tbsp of juice for the meatballs)
  • ¼ cup Fody's Ketchup
  • ¼ cup rice vinegar
  • ¼ cup maple syrup
  • 2 Tbsp soy sauce
  • 1 Tbsp cornstarch
  • 1 Tbsp water

        Directions for Fody's Sweet & Sour Chicken Meatballs

        Whisk your ketchup, rice vinegar, maple syrup and soy sauce together in a pot and bring it to a boil over medium high heat.

        Once boiling, mix the cornstarch and water together then slowly whisk it into your sauce. Continue whisking until the sauce has thickened slightly. Take the pot off the stove and allow the sauce to cool.

        Preheat your oven to 350 degrees and spray a broiler pan with non-stick cooking spray.

        Next, mix your ground chicken, panko breadcrumbs, pineapple juice, soy sauce, egg, scallions and pepper together and form the mixture into 1 inch balls. Heat your olive oil in a pan over medium high heat and brown your chicken meatballs on all sides.

        Then place your meatballs on the prepared broiler pan and bake for 25-30 minutes.

        Once done, toss the chicken meatballs and pineapple chunks in your homemade sweet and sour sauce and serve!
