These Low FODMAP vegan Sloppy Joe's are a veggie-filled, plant-based, and gut-friendly version of the nostalgic childhood dish. They're filled with diced Low FODMAP veggies, crumbled tofu, and Fody's Vegan Bolognese for an easy weeknight meal that's both hearty and comforting. Served messy on purpose, over gluten-free hamburger buns!
Drain tofu + squeeze out excess liquid with a paper towel. Using your hands or a fork, crumble block of tofu into small pieces into a bowl. Set aside.
Heat a large pan over medium-high. Add olive oil.
Add celery, peppers, and corn. Sauté for 5 mins.
Add crumbled tofu, chili powder, and smoked paprika. Sauté for additional 5 mins.
Stir in Fody Bolognese Pasta Sauce and season with salt + pepper. Allow to simmer for 5 mins, stirring occasionally.
Slice gluten-free buns in half and spoon tofu-bolognese mixture on top. Garnish with fresh basil + enjoy!
